Simple Dinner Idea

I may have failed to mention this, but this blog won't be only about the family. It so happens that I am in charge of writing the posts, so I will also include stuff I like, such as cooking, and crochet, and some sewing along with it..... hopefully you won't mind too much (Probablemente no mencioné esto antes, pero este blog no va a ser solo sobre la familia. Como yo soy la que está a cargo de escribir cada entrada, también quiero incluir cosas como recetas, crochet y mis proyectos de costura, espero que no les moleste...)
That being said, I made this super easy dinner last week and I want to share the recipe. I used to be so intimidated by fish back when I had just started cooking. There is this misconception about fish being tricky, probably most people think the same about bread. Well, this recipe should show you just how easy cooking with fish is. (Habiendo aclarado esto, la semana pasada hice una cena súper fácil y quiero compartir la receta con ustedes. Antes, cuando recién empezaba a cocinar me asustaba un poco cocinar con pescado. Muchos piensan que el pescado es difícil de cocinar, lo mismo sucede con el pan. Esta receta les mostrará cuán fácil es en realidad)

Broiled Salmon with Corn Salad (Salmon asado al horno con ensalada de maiz)
2 salmon fillets (2 filetes de salmón)
Salt (sal)
Grill seasoning (Sazonador para la parrilla, es una combinación de diferentes tipos de pimienta y otras especies, si no lo tienen, pueden usar pimienta normal)
Chili powder (Chile rojo en polvo)
1/2 bag of frozen corn (1/2 bolsa de maiz congelado o 1 lata de maiz)
1/2 onion chopped (1/2 cebolla picada)
2 garlic cloves minced (2 dientes de ajo picados)
Salsa
Olive oil (aceite de oliva)

Preheat the oven in the broiler setting and set rack on the second space in your oven. (Precaliente el horno en la opción broiler y coloque la rejilla del horno en el segundo espacio del horno).

Pat the salmon dry with paper towels and season with salt, grill seasoning or pepper and chili powder to taste (Seque el salmón con papel toalla y sazónelo con sal, sazonador de parrilla o pimienta y chile rojo en polvo al gusto).

Place the salmon on a metal pan lined with aluminum foil and place in the oven. The amount of time it will need under the broiler depends on how hot your oven gets. My broiler has two settings, I broiled this salmon on the first setting for 7 minutes and then I turned it and it broiled for another 7 minutes on the other side. Just pay attention and don't burn it, it will cook very quickly. (Coloque el samón en un molde metálico forrado con papel aluminio y ponga en el horno. El tiempo de cocción depende de cuanto caliente su horno. Mi broiler tiene dos temperaturas, yo cociné mi salmón en la temperatura #1 por 7 minutos y después le di vuelta y lo cociné por otros 7 minutos. Tengan cuidado de no quemarlo, ya que se cocina bien rápido).

On the meanwhile in a sauté pan, heat the olive oil, sauté the onion and garlic until translucent. You can add other veggies at this point too, I had some zucchini leftover, bell pepper would also be a good idea. Add corn and sauté until warmed through, season to taste. Add salsa and heat until warmed through. (Mientras el salmón se cocina, en una sartén caliente el aceite de oliva, sofría la cebolla y el ajo hasta que la cebolla esté transparente. Puede agregar otros vegetales en este paso también, yo tenía un zapallo, un aji morrón o chile dulce también funcionaria. Agregue el maiz y sofria hasta que esté caliente, sazone al gusto. Agregue la salsa y cocine hasta que todo esté caliente).

Serve the salmon with the corn salad, along with lime wedges and homemade tortillas. (Sirva el salmón con la ensalada de maiz, rodajas de lima y tortillas caseras).
